Great to know. I would just assume to get commercial, although I have had the "real" stuff, and it tastes so much better.

what does that mean: put the light at the bottom of the tank? I'm from the US. Is this recipe from canada or australia? Maybe it's a term used there.

Great informative post. It's really amazing to learn a bit of history about maple syrup. I love maple syrup, its natural and healthy. Back in the days, making maple syrup was really hard labor. Now, if you want maple syrup go to the grocery store. LOL. Thanks for posting.

After you make your own.... it is impossible to use anything but real Maple Syrup.

It is even hard to use someone elses.

I don't understand how anyone can use anything but maple. No matter what the corn producers say: All sugar isn't the same. It sounds like it gave you an excellent reason to have a few pints with your dad too. Thumbs up.

My dad and I used to make maple syrup.

It is a lot of work but it is nice having real (ie no high fructose corn syrup) to put on your pancakes in the morning. We lived on a Mountain side so we had HDPE pipelines going up the mountain side so there was no collecting buckets would just gravity feed into a large collection drum so we could boil it.

I remember sitting there to 2 or 3 in the morning drinking beer just to finish up a batch.

All that work to make 30 gallons of the stuff.

I miss those days.
